Now, more and more, evidence is coming to light that reducing animal-sourced foods in the western diet would dramatically help the health of the planet, as well.
According to a recent research article in the Proceedings of the National Academy of Sciences of the United States of America "The food system is responsible for more than a quarter of all greenhouse gas emissions, of which up to 80% are associated with livestock production." Further, every scenario of projections of green house gas emissions in 2050 revealed increasing emissions for diets including animal foods and decreasing emissions projected for plant-based diets, vegetarian and vegan.
